Cilantro Lime Rice (Print Version)

# Ingredients:

→ Rice Base

01 - 2 tablespoons extra virgin olive oil
02 - 1 1/2 cups basmati rice
03 - 1 clove garlic, minced
04 - 2 1/4 cups water
05 - 1 teaspoon salt

→ Fresh Ingredients

06 - Zest of 1 lime
07 - 3 tablespoons lime juice
08 - 1 cup chopped fresh cilantro (leaves and tender stems)

# Instructions:

01 - Heat olive oil in a medium saucepan over medium-high heat. Add rice and stir to coat with oil. Cook until rice starts to brown, stirring occasionally. Add minced garlic and cook for one more minute.
02 - Add water, salt, and lime zest. Bring to a rolling boil, then cover and reduce heat to low. Simmer for 15 minutes, then remove from heat and let stand covered for 10 minutes.
03 - Fluff rice with a fork, transfer to a serving bowl. Pour lime juice over rice and toss with chopped cilantro. Serve hot.
