Cilantro Lime Rice

# Ingredients:

2 tablespoons olive oil.

1 1/2 cups basmati rice.

1 garlic clove, minced.

2 1/4 cups water.

1 teaspoon salt.

1 lime, zested and juiced.

1 cup chopped cilantro.
# Instructions:

Brown rice in oil until toasted.

Add garlic, cook briefly.

Add water, salt, lime zest.

Simmer covered for 15 minutes.

Rest 10 minutes off heat.
