Cilantro Orange Chicken Meal (Print Version)

# Ingredients:

→ Cilantro Orange Sauce

01 - 1/4 - 1/2 cup finely chopped cilantro
02 - 2 cloves garlic, grated
03 - Juice of 2 oranges (about 4-5 tablespoons) plus zest
04 - 3 tablespoons brown sugar
05 - 3 tablespoons avocado oil
06 - 2 tablespoons white vinegar
07 - 1 1/2 teaspoons salt

→ Chicken

08 - 1.25 pounds boneless skinless chicken thighs, cut into bite-sized pieces
09 - Wood or metal skewers (optional)

→ For Serving (Optional)

10 - One 8.8-ounce pouch pre-made yellow rice
11 - One 14-ounce can refried or regular black beans
12 - 1-2 cups diced pineapple, mango, and/or avocado

# Instructions:

01 - If using wood skewers, soak them in water for at least 30 minutes before use. Line a baking sheet with parchment paper or aluminum foil. Position an oven rack about 6 inches from the heating element and preheat the broiler.
02 - Combine all cilantro orange sauce ingredients in a small bowl and mix thoroughly.
03 - Place chicken pieces in a large mixing bowl. Pour half of the sauce over the chicken and toss to coat evenly, reserving the remaining sauce for later use.
04 - Thread the marinated chicken onto skewers, or place directly on the prepared baking sheet, allowing excess sauce to drip off. Season with an additional pinch of salt if desired.
05 - Broil the chicken for 12 minutes, or until cooked through with a golden brown exterior.
06 - Mix a small amount of the reserved sauce with diced pineapple, mango, or avocado to create a complementary fruit salsa.
07 - Brush the cooked chicken with the remaining sauce. Serve alongside yellow rice, black beans, and the fruit salsa if prepared.
