# Ingredients:

01 - Nonstick cooking spray, for greasing mini muffin tin
02 - 180 grams all purpose flour
03 - 2 teaspoons baking powder
04 - 0.5 teaspoon kosher salt
05 - 2 teaspoons ground cinnamon
06 - 60 grams unsalted butter, melted
07 - 50 grams granulated sugar
08 - 1 large egg
09 - 0.5 teaspoon vanilla extract
10 - 120 millilitres unsweetened applesauce
11 - 1.5 cups finely diced Honeycrisp or Gala apples (approximately 2 medium apples)

12 - 240 grams powdered sugar
13 - 100 millilitres apple cider or apple juice

# Directions:

01 - Preheat oven to 175°C and lightly coat a mini muffin tin with nonstick cooking spray.
02 - Combine flour, baking powder, kosher salt, and ground cinnamon in a medium mixing bowl and whisk to distribute evenly.
03 - In a separate bowl, whisk together melted unsalted butter and granulated sugar until well blended. Incorporate the egg, vanilla extract, and applesauce, mixing until uniform and smooth.
04 - Gradually add the dry ingredient blend to the wet mixture, stirring gently until just combined. Fold in the finely diced apples to distribute evenly without overmixing.
05 - Spoon the batter into prepared muffin cups, filling each about three-quarters full. Bake for 12 to 15 minutes, or until a toothpick inserted in the centre emerges clean.
06 - While the fritter bites cool slightly, whisk powdered sugar and apple cider together in a bowl until a smooth, slightly thick glaze forms.
07 - Submerge each warm apple fritter bite into the glaze, allowing excess to drip off. Place glazed bites on a wire rack to set the coating.
