Ground Beef Chili (Print Version)

# Ingredients:

01 - 1 medium yellow onion.
02 - 3 cloves garlic.
03 - 2 (15 oz) cans kidney beans.
04 - 2 tablespoons olive oil.
05 - 3 tablespoons tomato paste.
06 - 2 pounds ground beef (80-85% lean).
07 - 2 teaspoons kosher salt.
08 - 1/2 teaspoon black pepper.
09 - 2 tablespoons chili powder.
10 - 1 tablespoon ground cumin.
11 - 1 tablespoon unsweetened cocoa.
12 - 2 teaspoons dried oregano.
13 - 1 teaspoon paprika.
14 - 1/4 teaspoon cayenne (optional).
15 - 28 oz fire-roasted crushed tomatoes.
16 - 14.5 oz low-sodium broth.
17 - 1 teaspoon apple cider vinegar.
18 - Optional Toppings: Sour cream, Shredded cheddar, Scallions, Avocado, Cilantro, Tortilla chips.

# Instructions:

01 - Dice onion and mince garlic, drain and rinse beans.
02 - Sauté onion in oil until soft, then add garlic and cook briefly.
03 - Add tomato paste and cook until darkened.
04 - Brown beef with salt and pepper until cooked through.
05 - Add all spices and cocoa powder, cooking one minute more.
06 - Stir in beans, tomatoes, and broth, bring to boil.
07 - Reduce heat and simmer 30-40 minutes until thickened.
08 - Finish with vinegar and adjust seasoning.
09 - Serve hot with choice of toppings.
