Classic Lemon Bars (Print Version)

# Ingredients:

→ Crust

01 - 1½ sticks (12 tablespoons) unsalted butter, room temperature
02 - 1 large lemon, zested
03 - ¼ cup granulated sugar
04 - ½ teaspoon kosher salt
05 - 1¾ cups all-purpose flour

→ Filling

06 - 4 large eggs, room temperature
07 - 5 large lemons (including one from crust)
08 - 1½ cups granulated sugar
09 - ⅓ cup all-purpose flour
10 - ½ teaspoon kosher salt

→ Topping

11 - Powdered sugar for dusting

# Instructions:

01 - Heat oven to 350°F. Line 9x9-inch pan with parchment paper slings. Let butter and eggs come to room temperature.
02 - Mix lemon zest with sugar, add butter and salt, beat until creamy. Mix in flour until crumbly. Press into pan and bake 15-22 minutes until light golden.
03 - Whisk eggs with lemon zest. Add lemon juice, sugar, and salt. Sift in flour and whisk until smooth.
04 - Pour filling over hot crust. Bake 18-20 minutes until just set with slight wiggle in center.
05 - Cool 1 hour, then refrigerate at least 3 hours. Cut into 16 pieces and dust with powdered sugar before serving.

01 - Dip knife in hot water between cuts for clean slices
02 - Dust with powdered sugar just before serving
