Classic Porcupine Meatballs (Print Version)

# Ingredients:

→ Meatballs

01 - 1¾ pounds extra lean ground beef
02 - 1 medium onion, finely chopped
03 - ½ cup uncooked long-grain rice
04 - 1 cup milk
05 - 1 teaspoon baking powder

→ Seasonings

06 - ½ teaspoon poultry seasoning
07 - 1 pinch ground cloves
08 - ½ teaspoon dried thyme
09 - 2 teaspoon salt
10 - ½ teaspoon pepper

→ Sauce and Assembly

11 - 2 tablespoons olive oil
12 - 2 cans (10.75 oz each) condensed tomato soup
13 - 2 cans water (measured using soup can)
14 - 2 tablespoons parsley, finely chopped

# Instructions:

01 - Preheat oven to 350°F (175°C).
02 - Combine all meatball ingredients in a large bowl, mixing well with clean hands. Mixture will be soft.
03 - With wet hands, form mixture into about 30 medium-sized meatballs. Place in oiled 9x13 inch casserole dish.
04 - Mix tomato soup with water, pour over meatballs. Sprinkle with parsley and cover with foil.
05 - Bake covered for 35 minutes, then uncovered for 30-35 minutes until rice pokes through meatballs.
