Buttery rye, Swiss cheese, corned beef, sauerkraut, and creamy dressing combine for a golden, melty sandwich.

# Ingredients:

→ Sandwich Components

01 - 4 slices dark rye bread
02 - 1 cup Swiss cheese, shredded
03 - 4 tablespoons thousand island dressing
04 - 1 cup sauerkraut, drained
05 - ½ pound corned beef or pastrami, thinly sliced
06 - 4 tablespoons unsalted butter, softened

# Directions:

01 - Lay out 2 slices of bread on a cutting board. Top each slice with Swiss cheese. Drizzle thousand island dressing on each slice, then layer with corned beef and sauerkraut. Place another slice of bread on top of each sandwich. Spread 1 tablespoon of butter on the outer side of the top bread slice.
02 - Preheat a large skillet over medium heat. Place sandwiches buttered side down into the skillet and cook until golden, about 3 minutes. Spread remaining butter on the outer side of the bread slices, flip the sandwiches, and cook for an additional 2 to 3 minutes until the bread is golden and the cheese melts.

# Notes:

01 - Use sturdy bread like dark rye to hold the fillings.
02 - Drain sauerkraut thoroughly to avoid a soggy sandwich.
03 - Alternative cheeses like Gruyère, Havarti, or Provolone can be used instead of Swiss cheese.
04 - Adjust skillet temperature to medium for optimal crispiness and even melting.
05 - Reheat in a skillet or air fryer for a crispy finish if making ahead of time.
