Cod in Roasted Red Pepper (Print)

# Ingredients:

→ For the Cod

01 - 4 cod fillets (about 170g each)
02 - 2 tablespoons olive oil
03 - Salt and pepper, to taste
04 - 1 teaspoon paprika (optional)

→ For the Roasted Red Pepper Sauce

05 - 2 roasted red peppers (jarred or homemade)
06 - 1/4 cup finely chopped onion
07 - 2 cloves garlic, minced
08 - 1/2 cup heavy cream or coconut cream
09 - 1/4 cup chicken or vegetable broth
10 - 1 tablespoon olive oil
11 - 1 teaspoon smoked paprika
12 - 1/2 teaspoon dried oregano
13 - Salt and pepper, to taste
14 - Fresh parsley, chopped, for garnish

# Directions:

01 - Pat the cod fillets dry with paper towels. Season both sides thoroughly with salt, pepper, and paprika if using.
02 - Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3-4 minutes per side, until opaque and flaking easily. Remove from skillet and set aside.
03 - In the same skillet, add 1 tablespoon of olive oil. Sauté the chopped onion and minced garlic for 2-3 minutes until softened and fragrant. Add the roasted red peppers, smoked paprika, and oregano, cooking for an additional 2 minutes.
04 - Transfer the vegetable mixture to a blender or use an immersion blender directly in the skillet. Blend until completely smooth. If using a standard blender, return the pureed sauce to the skillet.
05 - Add the heavy cream (or coconut cream) and broth to the pureed pepper mixture. Stir to combine and bring to a gentle simmer. Cook for 3-4 minutes until slightly thickened. Adjust seasoning with salt and pepper to taste.
06 - Return the cooked cod fillets to the skillet, spooning sauce over each piece. Simmer gently for 2-3 minutes to allow the fish to absorb the flavors. Garnish with fresh parsley before serving with your choice of sides.

01 - You can substitute any white fish fillet such as halibut or tilapia for the cod.
02 - For more intense flavor, add a squeeze of fresh lemon juice to the sauce just before serving.
