Cookie Monster Gooey Cake (Print Version)

# Ingredients:

→ Crust Layer

01 - 1 box yellow cake mix
02 - 1/2 cup salted butter, melted
03 - 1 large egg
04 - 1/2 cup mini chocolate chips

→ Gooey Layer

05 - 1 (8oz) package of cream cheese, softened
06 - 2 large eggs
07 - 1 tsp vanilla extract
08 - 4 cups powdered sugar
09 - 1/2 cup crushed chocolate chip cookies (about 6 Chips Ahoy cookies)
10 - 1/4 cup mini chocolate chips
11 - Blue food coloring, as desired

→ Topping

12 - 1/2 cup crushed Oreos (about 6 cookies)
13 - 1/2 cup crushed chocolate chip cookies (about 6 Chips Ahoy cookies)

# Instructions:

01 - Preheat the oven to 350°F (175°C). Spray a 9x13-inch baking dish with baking spray and line it with parchment paper.
02 - In a medium bowl, mix the cake mix, melted butter, and egg until well combined. Fold in the mini chocolate chips. Press the mixture evenly into the base of the prepared pan.
03 - In a large bowl, beat the cream cheese until smooth. Add the eggs and vanilla and mix until combined. Gradually add the powdered sugar and mix until smooth. Add blue food coloring to the desired shade and mix until no streaks remain. Fold in the crushed cookies and mini chocolate chips.
04 - Pour the gooey layer over the crust and spread evenly. Sprinkle the crushed Oreos and chocolate chip cookies on top. Bake for 40-45 minutes; the center should still be slightly jiggly but set around the edges.
05 - Remove the pan from the oven and allow it to cool completely. Refrigerate overnight for optimal texture before slicing into bars. Serve as desired.
