Cornmeal Popovers with Herb Honey (Print Version)

# Ingredients:

→ For the Cornmeal Popovers

01 - All-purpose flour
02 - Yellow cornmeal
03 - Salt
04 - Eggs
05 - Whole milk, warmed
06 - Butter, melted
07 - Honey

→ For the Herb Honey Butter

08 - Unsalted butter, softened
09 - Honey
10 - Fresh herbs, such as thyme, rosemary, or chives
11 - Salt

# Instructions:

01 - Preheat the oven to 450°F (230°C) and place a popover pan or muffin tin inside to heat. In a bowl, whisk together the flour, cornmeal, and salt. In another bowl, beat the eggs and warm milk until combined. Slowly mix the wet ingredients into the dry ingredients, stirring until smooth. Stir in melted butter and honey until incorporated.
02 - Remove the heated pan from the oven and grease each cup with butter. Pour the batter into each cup, filling about two-thirds full. Bake at 450°F (230°C) for 15 minutes, then reduce the heat to 375°F (190°C) and bake for another 15 minutes. Avoid opening the oven during baking. Remove from the oven and let cool for a few minutes.
03 - In a bowl, combine softened butter, honey, chopped fresh herbs, and salt. Whip the mixture until light and fluffy.
04 - Serve the warm popovers with a generous spread of herb honey butter.

01 - Do not open the oven while baking to ensure the popovers rise properly.
