Cottage Cheese Apple Cinnamon Pancakes (Print)

Fluffy pancakes with apple, cottage cheese, and cinnamon. A warming, sweet breakfast option.

# Ingredients:

01 - 4 large eggs, whites and yolks separated
02 - 1 ¼ cups all-purpose flour
03 - 3 medium apples, peeled, cored, and grated
04 - 1 cup small curd cottage cheese
05 - 1 tablespoon honey
06 - ¼ teaspoon ground cinnamon
07 - 1 pinch salt
08 - 2 to 3 tablespoons grape seed oil or extra light olive oil, for sautéing
09 - Powdered sugar, for dusting (optional)

# Directions:

01 - In a large mixing bowl, combine 1 ¼ cups of flour, 4 egg yolks, 3 grated apples, 1 cup of cottage cheese, 1 tablespoon of honey, ¼ teaspoon of cinnamon, and a pinch of salt. Mix until the ingredients are evenly blended.
02 - In a separate clean bowl, beat the egg whites on high speed using a hand mixer for approximately 1.5 minutes, or until foamy with soft peaks. Carefully fold the beaten egg whites into the batter using a spatula.
03 - Preheat a large nonstick skillet over medium-high heat and add 2-3 tablespoons of grape seed or extra light olive oil. Drop a tablespoon of the batter onto the skillet and gently press it down. Sauté for 3-4 minutes per side, or until golden brown on each side.
04 - Optionally dust the pancakes with powdered sugar and serve with sour cream or your favorite jam.

01 - Be gentle when folding the egg whites into the batter to retain the airy texture of the pancakes.
