# Ingredients:

→ Batter

01 - 2 large eggs
02 - 1 cup milk
03 - 1 cup water
04 - 1 teaspoon vanilla extract
05 - 3 cups all-purpose flour
06 - ¼ cup granulated sugar
07 - 3 teaspoons baking powder
08 - ¼ teaspoon salt

→ For frying and serving

09 - Oil for deep-fat frying
10 - Powdered sugar for serving

# Directions:

01 - Heat oil to 190°C in a deep-fat fryer or heavy-bottomed skillet.
02 - In a large bowl, beat eggs. Add milk, water, and vanilla extract, and whisk until well combined. Gradually incorporate the flour, granulated sugar, baking powder, and salt, stirring until smooth.
03 - Cover the bottom of a funnel spout with your finger and carefully ladle 120ml (½ cup) batter into the funnel. Hold the funnel several inches above the hot oil and release your finger, moving the funnel in a spiral motion until all batter is dispensed. Use a rubber spatula if necessary.
04 - Fry for 3-5 minutes per side until golden brown, flipping once with tongs. Drain on paper towels.
05 - Dust the funnel cakes with powdered sugar and serve warm.
06 - Repeat the batter pouring and frying steps with the remaining batter.

# Notes:

01 - Always use a thermometer to monitor oil temperature. Overheated oil can cause burning, while low temperatures lead to excessive oil absorption.
