Heat oil to 190°C in a deep-fat fryer or heavy-bottomed skillet.

In a large bowl, beat eggs. Add milk, water, and vanilla extract, and whisk until well combined. Gradually incorporate the flour, granulated sugar, baking powder, and salt, stirring until smooth.

Cover the bottom of a funnel spout with your finger and carefully ladle 120ml (½ cup) batter into the funnel. Hold the funnel several inches above the hot oil and release your finger, moving the funnel in a spiral motion until all batter is dispensed. Use a rubber spatula if necessary.

Fry for 3-5 minutes per side until golden brown, flipping once with tongs. Drain on paper towels.

Dust the funnel cakes with powdered sugar and serve warm.

Repeat the batter pouring and frying steps with the remaining batter.
