Cowboy Queso Dip (Print Version)

# Ingredients:

01 - ½ pound hot or regular pork sausage, casing removed
02 - ¾ cup Pale Ale beer (or favorite beer)
03 - 16 ounces Velveeta, cut into 1-inch cubes
04 - ½ cup freshly shredded pepper jack cheese
05 - 1 can (14.5-ounce) Rotel tomatoes, undrained
06 - 1 cup black beans, drained and rinsed
07 - ¼ cup chopped fresh cilantro
08 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - Brown sausage in medium skillet over medium heat, breaking into crumbles. Season with salt and pepper.
02 - Pour in beer and simmer 3-4 minutes to reduce slightly.
03 - Add Velveeta and pepper jack, stirring until completely melted, about 3-5 minutes.
04 - Stir in Rotel tomatoes, black beans, and cilantro until well combined.
05 - Serve immediately with chips.
