Crack Chicken Stuffed Potatoes (Print Version)

# Ingredients:

→ Base

01 - 4 pounds large Russet potatoes (4-6 potatoes)
02 - 1 pound boneless skinless chicken breast

→ Crack Chicken Mixture

03 - 1 tablespoon Ranch seasoning mix
04 - 4 ounces cream cheese
05 - 3 slices bacon, cooked and crumbled
06 - 1 cup sharp cheddar cheese, freshly grated

→ Optional Toppings

07 - Extra crumbled bacon
08 - Chopped chives
09 - Ranch dressing
10 - Blue cheese crumbles

# Instructions:

01 - Place chicken in slow cooker, top with Ranch seasoning and cream cheese. Cook on HIGH 2.5-3 hours or LOW 4-5 hours.
02 - Shred chicken in pot, stir in bacon and cheddar cheese.
03 - Bake potatoes at 425°F for 45-60 minutes until tender, or microwave about 7 minutes.
04 - Split potatoes, fluff insides. Fill with chicken mixture, top with cheese and bacon.
05 - Broil 5 minutes until cheese melts. Rest 5 minutes, garnish with chives and Ranch if desired.
