Cranberry Spinach Stuffed Chicken (Print)

# Ingredients:

01 - 2 large chicken breasts, boneless and skinless
02 - 1 cup fresh spinach, chopped
03 - ¼ cup dried cranberries
04 - ¼ cup crumbled goat cheese
05 - 1 tbsp olive oil
06 - 1 clove garlic, minced
07 - Salt, to taste
08 - Black pepper, to taste
09 - ½ tsp dried thyme
10 - Toothpicks or kitchen twine

# Directions:

01 - Preheat oven to 375°F (190°C).
02 - In a small bowl, mix chopped spinach, cranberries, and goat cheese until evenly combined.
03 - Butterfly each chicken breast and pound to an even thickness. Season with salt, pepper, and thyme.
04 - Fill each chicken breast with the goat cheese mixture and secure with toothpicks or twine.
05 - Heat olive oil in a skillet. Sauté garlic for 30 seconds, then sear stuffed chicken 2–3 minutes per side until golden.
06 - Transfer to a baking dish and bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
07 - Let rest 5 minutes before slicing and serving.
