Creamy Miso Butter Beans (Print)

Umami-rich butter beans simmered with miso paste, cream, and fresh spinach for a satisfying and flavorful main dish.

# Ingredients:

01 - 1 tablespoon olive oil
02 - 2 shallots, thinly sliced
03 - 2 cloves garlic, minced
04 - 2 cans butter beans, drained and rinsed
05 - 1 1/2 cups vegetable stock
06 - 1 tablespoon white miso paste
07 - 1/2 cup whole cream or coconut cream
08 - 3 cups packed baby spinach
09 - 1/2 teaspoon sea salt
10 - 1/2 teaspoon ground black pepper
11 - 2 tablespoons lemon juice
12 - 1 tablespoon chopped fresh dill (optional)

# Directions:

01 - In a large skillet or pot, heat the olive oil over medium-high heat, and once hot, add the shallots. Cook for 3 to 5 minutes until they become translucent.
02 - Add the garlic and cook for 30 seconds.
03 - Pour in the rinsed butter beans, vegetable stock, and miso paste. Stir till the miso paste has dissolved. Simmer for 10 minutes to reduce. Stir in the cream and simmer for another 5 minutes.
04 - Stir in the baby spinach, salt, and pepper, and remove from the heat once the spinach has wilted. Stir in the lemon juice.
05 - Top with optional fresh dill and serve with slices of crusty bread.
