One Pot Zucchini Pasta (Print Version)

# Ingredients:

01 - 1/4 cup olive oil.
02 - 4 large zucchini (2 pounds), coarsely grated.
03 - 2 1/2 teaspoons kosher salt.
04 - 1/2 teaspoon black pepper.
05 - 3 1/4 cups water.
06 - 1 pound rigatoni or penne pasta.
07 - 6 ounces cream cheese, softened.
08 - 1 lemon, zested and juiced.
09 - 1/4 cup chopped toasted walnuts.

# Instructions:

01 - Heat oil in large pot over medium-high heat.
02 - Add grated zucchini, 1 teaspoon salt and pepper. Cook until jammy, 10-12 minutes.
03 - Remove zucchini and set aside.
04 - Add water to pot and bring to boil. Add remaining salt.
05 - Add pasta and cream cheese. Cook until al dente, 11-13 minutes.
06 - Return zucchini, add lemon zest and juice. Cook 2 minutes more.
07 - Add water if needed for glossy sauce. Season to taste.
08 - Serve topped with walnuts.

01 - One pot meal.
02 - Zucchini should be caramelized until jammy.
03 - Add water if pasta needs more cooking.
04 - Best served immediately.
05 - Stores 3 days refrigerated.
