Crispy Cheesy Corn (Print)

Golden corn fritters with melty cheddar and green onions, fried until irresistibly crispy on the outside, tender on the inside.

01 - 2 cups fresh corn kernels
02 - 1 cup shredded sharp cheddar cheese
03 - 1 cup all purpose flour
04 - 1 teaspoon baking powder
05 - 2 large eggs
06 - 0.25 cup finely chopped green onions

# Directions:

01 - Measure all ingredients and cut the kernels from fresh corn cobs if using whole corn.
02 - In a large mixing bowl, whisk together all-purpose flour and baking powder until evenly blended.
03 - In a separate bowl, beat the eggs thoroughly. Add in the corn kernels, shredded cheddar cheese, and chopped green onions. Mix until everything is incorporated.
04 - Pour the wet mixture into the bowl with the dry ingredients. Gently fold together just until combined, being careful not to overmix.
05 - Heat a thin layer of neutral oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil, spacing them apart. Fry each side for approximately 3 minutes, or until golden brown.
06 - Transfer the cooked fritters onto paper towels to drain excess oil before serving.
