Crispy Loaded Potato Bombs (Print Version)

# Ingredients:

01 - 3 russet potatoes.
02 - 12 cubes cheddar cheese.
03 - 3 slices bacon.
04 - 1 tablespoon sour cream, plus 1/4 cup for sauce.
05 - 1 teaspoon each: salt, pepper, dried parsley.
06 - 2 tablespoons butter.
07 - 3-4 cups vegetable oil.
08 - 2 eggs.
09 - 1/2 cup flour.
10 - 1 cup bread crumbs.
11 - 1 tablespoon seasoning.
12 - 1/4 cup mayonnaise.
13 - 1/4 cup green onions, chopped.
14 - 1 tablespoon lemon juice.

# Instructions:

01 - Peel and boil potatoes until tender. Mash with sour cream, butter and seasonings.
02 - Roll potato mixture into golf ball sized portions. Stuff with cheese and bacon.
03 - Coat balls in flour, then egg wash, then bread crumbs.
04 - Fry in medium-high oil for 2 minutes until golden brown.
05 - Mix sour cream, mayo, green onion, seasonings and lemon juice. Serve with hot potato bombs.

# Notes:

01 - Can prep balls ahead before breading.
02 - Don't fry too hot or outside will brown before cheese melts.
