Crispy Smashed Carrot Bites (Print)

Golden-edged carrot rounds smashed and roasted with Parmesan, garlic, and smoked paprika for an irresistible savory bite.

01 - 450g carrots, peeled and cut into thick rounds
02 - 15ml olive oil
03 - 30ml grated Parmesan cheese
04 - 2g garlic powder
05 - 1g smoked paprika
06 - Salt and black pepper to taste
07 - Fresh parsley, chopped for garnish

# Directions:

01 - Preheat oven to 220°C. Line a baking sheet with parchment paper.
02 - Boil carrot rounds in salted water for 10-12 minutes, until fork-tender. Drain and allow to cool slightly.
03 - Arrange carrots on the prepared baking sheet. Using the bottom of a glass or measuring cup, gently press down on each round to flatten slightly.
04 - Drizzle with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Sprinkle with grated Parmesan cheese.
05 - Roast in the oven for 20-25 minutes, flipping halfway through, until edges are golden and crispy.
06 - Garnish with chopped parsley and serve hot.
