Cucumber & Bell Pepper Salad (Print)

A crisp, sweet-spicy summer salad with mini cucumbers, colorful bell peppers, chili crisp oil and ginger sesame dressing.

# Ingredients:

01 - 3-4 mini cucumbers, thinly sliced
02 - 6-7 mini bell peppers (orange, red, yellow), thinly sliced
03 - 2 tablespoons chili crisp oil
04 - 1/4 cup ginger sesame dressing
05 - 2 1/2 teaspoons Everything But The Bagel Seasoning

# Directions:

01 - Slice the cucumbers and bell peppers into thin circles.
02 - Add all ingredients to a large bowl and mix thoroughly to combine.
03 - Refrigerate for 30 minutes before serving for optimal flavor development.

# Notes:

01 - For a high-protein variation, serve over 1 cup of cottage cheese (not dairy-free)
02 - Feel free to use any Asian sesame dressing available at your local grocery store
03 - Everything But the Bagel seasoning is available at Trader Joe's or similar alternatives at most supermarkets
04 - Adjust seasonings, chili oil, and dressing quantities to personal preference
05 - Transform into a complete meal by adding cooked chicken breast or rotisserie chicken and/or pasta such as bow tie, macaroni, fusilli, or penne
