Cucumber and Sweet Pepper Salad (Print)

Crisp vegetables with sesame ginger dressing, finished with chili oil and bagel seasoning for a refreshing, flavorful dish.

# Ingredients:

→ For the Sesame Ginger Dressing

01 - 60 ml extra virgin olive oil
02 - 7 ml rice vinegar
03 - 7 ml sesame oil
04 - 15 ml soya sauce
05 - 7 ml grated fresh ginger
06 - 22 ml honey

→ For the Salad

07 - 7-8 mini sweet bell peppers (mixed colors), sliced into rings
08 - 4 Persian cucumbers, sliced
09 - 60 ml sesame ginger dressing
10 - 15-30 ml chili oil
11 - 10-15 ml everything but the bagel seasoning

# Directions:

01 - In a small bowl, whisk together olive oil, rice vinegar, sesame oil, soya sauce, grated ginger, and honey until well combined.
02 - Add sliced bell peppers and cucumbers to a mixing or serving bowl.
03 - Pour the prepared dressing over the vegetables, add chili oil, and sprinkle with everything but the bagel seasoning. Toss gently to combine.
04 - Adjust chili oil and bagel seasoning to taste. Serve immediately or chill until ready to serve.

# Notes:

01 - This salad is best enjoyed fresh but can be refrigerated for up to 24 hours.
