Homemade Sweetened Condensed Milk (Print Version)

# Ingredients:

01 - 2 cups whole milk.
02 - 1/4 teaspoon salt.
03 - 1/2-3/4 cup sugar.
04 - 1 teaspoon vanilla.

# Instructions:

01 - Mix milk, sugar and salt in medium pot over medium-high. Whisk until sugar dissolves.
02 - Lower heat to gentle simmer. Don't whisk again, just stir bottom occasionally. Cook 30-45 minutes.
03 - It's done when volume is half and color deepens like maple syrup. Add vanilla.
04 - Pour through strainer if there's foam or solids. Let cool completely.
05 - Keep in sealed container in fridge up to 1 month. Warm briefly to make pourable again.

# Notes:

01 - Use smaller pans to cook faster.
02 - Thickens more as it cools.
03 - Don't whisk after sugar dissolves.
