Mix milk, sugar and salt in medium pot over medium-high. Whisk until sugar dissolves.

Lower heat to gentle simmer. Don't whisk again, just stir bottom occasionally. Cook 30-45 minutes.

It's done when volume is half and color deepens like maple syrup. Add vanilla.

Pour through strainer if there's foam or solids. Let cool completely.

Keep in sealed container in fridge up to 1 month. Warm briefly to make pourable again.
