Doritos Cheesy Chicken Casserole (Print)

A mouthwatering blend of crunchy Doritos, shredded chicken and gooey cheese baked into the ultimate comfort food casserole.

01 - 4 cups fiesta blend shredded cheese, divided (reserve 1 cup for topping)
02 - 3 cups shredded cooked chicken breast
03 - 9.25 ounces nacho cheese Doritos, crushed (reserve 1½ cups for topping)
04 - 10.5 ounces cream of mushroom soup, undiluted
05 - 10.5 ounces cream of chicken soup, undiluted
06 - 15.25 ounces southwest-style canned corn, drained
07 - 8 ounces sour cream
08 - 1 cup mild chunky salsa

# Directions:

01 - Preheat oven to 350°F (175°C). Thoroughly coat a 9×13 inch baking dish with nonstick cooking spray.
02 - Spread the crushed Doritos (except for the reserved 1½ cups) evenly across the bottom of the prepared baking dish.
03 - In a medium bowl, thoroughly combine the sour cream with both undiluted soups until smooth and well incorporated.
04 - In a large bowl, mix together the salsa, drained corn, shredded chicken, and 3 cups of shredded cheese. Add the creamy soup mixture and stir until evenly combined.
05 - Spread the chicken and cheese mixture evenly over the Doritos base in the baking dish.
06 - Sprinkle the reserved 1½ cups of crushed Doritos over the top, then evenly distribute the remaining 1 cup of shredded cheese.
07 - Bake in the preheated oven for approximately 25 minutes, or until the cheese is completely melted and bubbling around the edges. Serve immediately while hot.
