Place a 10-inch cast iron skillet into the oven and preheat to 475 degrees F (245 degrees C).

Whisk eggs in a medium bowl until light. Then whisk in milk and gradually whisk in flour, nutmeg, and salt until smooth.

Remove the skillet from the oven and reduce the heat to 425 degrees F (220 degrees C). Add butter to the hot skillet and swirl it to coat the bottom and sides.

Pour the prepared batter into the hot skillet and return to the oven. Bake until puffed and lightly browned, about 12 minutes.

Remove the skillet from the oven and immediately sift confectioners' sugar over the top before serving.
