Easter Carrot Cake Cookies (Print Version)

01 - 1 box carrot cake mix
02 - 1/2 cup vegetable oil
03 - 2 eggs
04 - 1/2 cup cream cheese chips
05 - Royal Icing decorative sprinkles (bunny and carrot shapes)

# Instructions:

01 - In a bowl, mix the carrot cake mix, vegetable oil, and eggs. Fold in the cream cheese chips. Refrigerate for at least a half hour.
02 - Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
03 - Use a small cookie scoop and place the dough 2 inches apart on the prepared baking sheets. Press one bunny and one carrot decorative sprinkle into each cookie.
04 - Bake for 11-13 minutes. Let cool completely before serving.

# Notes:

01 - Chilling the dough prevents the cookies from spreading too much during baking.
02 - If you can't find cream cheese chips, white chocolate chips can be substituted.
03 - Store in an airtight container for up to 5 days at room temperature.
