Easy Breakfast Casserole (Print Version)

# Ingredients:

01 - 6 to 10 large eggs.
02 - 2 to 3 cups grated cheddar cheese.
03 - 6 slices day-old bread, cubed.
04 - 2 cups milk.
05 - Salt to taste.
06 - Pepper to taste.
07 - 1 cup corn kernels (optional).
08 - 1/2 cup chopped broccoli (optional).
09 - 1/2 cup sliced mushrooms (optional).
10 - 1/4 cup sliced green onions (optional).
11 - 1 cup cubed ham or cooked sausage (optional).
12 - 3 slices cooked bacon, chopped (optional).
13 - 1 teaspoon Herbes de Provence (optional).
14 - 1/4 to 1/2 teaspoon cumin or curry powder (optional).

# Instructions:

01 - Heat oven to 350°F.
02 - Beat eggs in large bowl. Mix in milk and cheese. Add bread and stir until moistened.
03 - Stir in your choice of additions, salt, and pepper. Add more eggs if needed to cover ingredients.
04 - Butter a 9x13-inch casserole dish. Pour in mixture.
05 - Bake 50-60 minutes until top browns and center springs back.
06 - Cool for 10 minutes before serving.

# Notes:

01 - More eggs make firmer casserole.
02 - Sauté mushrooms first to remove moisture.
03 - Can be prepared night before.
04 - Fresh bread needs 10 minutes at 200°F to dry.
