Easy Creamy Salmon Florentine (Print Version)

# Ingredients:

→ For the Salmon

01 - 4 salmon fillets, skin-on or skinless
02 - 1 teaspoon salt
03 - ½ teaspoon black pepper
04 - ½ teaspoon paprika (optional)
05 - 1 tablespoon olive oil
06 - 1 tablespoon butter

→ For the Creamy Florentine Sauce

07 - 3 cloves garlic, minced
08 - 1 cup heavy cream
09 - ½ cup grated Parmesan cheese
10 - 1 teaspoon Dijon mustard
11 - 1 teaspoon lemon juice
12 - ½ teaspoon red pepper flakes (optional)
13 - 2 cups fresh spinach, chopped
14 - ½ cup cherry tomatoes, halved (optional)

# Instructions:

01 - Pat the salmon fillets dry and season with salt, pepper, and paprika. Heat olive oil and butter in a large skillet over medium-high heat. Place salmon fillets skin-side down and cook for 4-5 minutes until golden brown. Flip and cook for another 2-3 minutes, then remove from the pan and set aside.
02 - In the same skillet, sauté minced garlic until fragrant (about 30 seconds). Pour in heavy cream, Parmesan cheese, Dijon mustard, lemon juice, and red pepper flakes. Stir well and let simmer for 2 minutes. Add fresh spinach and cherry tomatoes (if using), cooking until the spinach wilts.
03 - Return the salmon fillets to the pan, spooning some sauce over the top. Let simmer for 2 minutes to heat through. Serve hot with your favorite sides.
