Easy Indian Chicken Curry Recipe (Print Version)

# Ingredients:

01 - 3 tablespoons olive oil.
02 - 1 small onion, chopped.
03 - 2 cloves garlic, minced.
04 - 3 tablespoons curry powder.
05 - 1 teaspoon ground cinnamon.
06 - 1 teaspoon paprika.
07 - 1 bay leaf.
08 - ½ teaspoon grated ginger.
09 - ½ teaspoon granulated sugar.
10 - 2 chicken breasts, boneless and skinless, cut into bite-size pieces.
11 - 1 tablespoon tomato paste.
12 - 1 cup plain yogurt.
13 - ¾ cup coconut milk.
14 - ½ lemon, juiced.
15 - ½ teaspoon cayenne pepper.
16 - Salt to taste.

# Instructions:

01 - Heat oil and cook onions until lightly browned. Add garlic, curry powder, cinnamon, paprika, bay leaf, ginger, and salt. Cook 2 minutes.
02 - Add chicken, tomato paste, yogurt, and coconut milk. Bring to boil, then reduce heat and simmer 20-25 minutes.
03 - Remove bay leaf. Stir in lemon juice and cayenne. Cook 5 minutes more on low heat.
