Egg Roll in a Bowl (Print Version)

# Ingredients:

01 - 500g ground turkey or pork
02 - 1 medium head of cabbage, thinly shredded
03 - 2 medium carrots, thinly shredded or matchstick cut
04 - 2 cloves garlic, minced
05 - 1 tablespoon fresh ginger, minced or ginger paste
06 - 3 tablespoons soy sauce, low-sodium or tamari for gluten-free option
07 - 1 tablespoon rice vinegar
08 - 1 tablespoon sesame oil

# Instructions:

01 - Thinly slice the cabbage into strips ¼ to ½ inch thick. If using whole carrots, shred them using a food processor or cheese grater.
02 - Heat a large skillet over medium heat. Add ground turkey or pork and cook for 5-6 minutes, breaking it up with the back of a spoon or potato masher until browned.
03 - Add 1 tablespoon oil to the skillet along with the onion. Cook until softened, then stir in carrots, garlic, and ginger. Deglaze the pan with chicken broth, then add shredded cabbage, soy sauce, vinegar, salt, and pepper. Stir to combine.
04 - Reduce heat to medium-low. Cover and cook for 12-15 minutes, stirring occasionally, until the cabbage is tender. Stir in sesame oil before serving. Garnish with green onions, sesame seeds, or red pepper flakes if desired.

01 - For better flavor and to avoid bitterness, use freshly shredded cabbage instead of pre-packaged coleslaw mix.
