My Favorite Royal Icing (Print Version)

# Ingredients:

01 - 4 cups (480g) confectioners' sugar, sifted.
02 - 3 Tablespoons meringue powder.
03 - 9-10 Tablespoons room temperature water.
04 - Optional: gel food coloring.

# Instructions:

01 - Pour confectioners' sugar, meringue powder, and 9 Tablespoons of water into a large bowl.
02 - Using a hand mixer or a stand mixer fitted with a whisk attachment, beat icing ingredients together on high speed for 1.5 – 2 minutes. When lifting the whisk up off the icing, the icing should drizzle down and smooth out within 5-10 seconds.
03 - If it's too thick, beat in more water 1 Tablespoon at a time. If too thin, keep beating to introduce more air OR add more sifted confectioners' sugar.
04 - Apply to cookies. Icing completely dries in about 2 hours at room temperature when applied in a thin layer.

# Notes:

01 - Cover with damp paper towel when not actively using to prevent hardening.
02 - Can add 1/2 teaspoon flavored extract for variety.
03 - Refrigerate decorated cookies to speed up drying time.
