Firecracker Shrimp (Print Version)

# Ingredients:

→ Shrimp

01 - 1 pound medium shrimp, peeled and deveined (about 25 shrimp)
02 - kosher salt and freshly ground black pepper to taste
03 - ½ cup cornstarch
04 - 2 large eggs, beaten
05 - ¼ cup canola oil for frying

→ Sauce

06 - ½ cup sweet chili garlic sauce
07 - 3 tablespoons freshly squeezed lemon juice
08 - 2 tablespoons honey
09 - 1-2 tablespoons lemon zest
10 - ½ teaspoon Sriracha
11 - ½ teaspoon freshly grated ginger
12 - ½ teaspoon garlic salt

# Instructions:

01 - Heat canola oil in large saucepan over medium-high heat.
02 - Season shrimp with salt and pepper. Coat in cornstarch, then dip in beaten eggs just before frying.
03 - Cook shrimp in batches of 4-6 until golden brown, about 2-3 minutes. Drain on paper towels.
04 - Combine sauce ingredients in wiped-clean pan. Bring to boil over medium-high heat for 2-3 minutes.
05 - Add fried shrimp to sauce and toss to coat. Serve immediately with rice or vegetables.
