Fresh Blueberry Banana Bread (Print Version)

# Ingredients:

01 - 2 cups (250g) all-purpose flour
02 - ¾ cup (150g) granulated sugar
03 - ¾ teaspoon baking soda
04 - ½ teaspoon kosher salt
05 - 4 large ripe bananas, mashed (about 2 cups)
06 - ¼ cup (57.5g) sour cream, room temperature
07 - 2 large eggs, room temperature
08 - 3 tablespoons unsalted butter, melted
09 - 3 tablespoons vegetable oil
10 - 1 teaspoon vanilla extract
11 - 1½ cups (222g) fresh blueberries, divided

# Instructions:

01 - Preheat oven to 350°F. Line 9x5-inch loaf pan with parchment paper and spray with cooking spray.
02 - Whisk together flour, sugar, baking soda, and salt in large bowl.
03 - Mash bananas in separate bowl. Stir in sour cream, eggs, melted butter, oil, and vanilla.
04 - Mix flour mixture into banana mixture. Fold in 1 cup blueberries.
05 - Pour into pan, top with remaining blueberries. Bake 75-78 minutes until toothpick comes out with few crumbs.
06 - Cool in pan 20 minutes before removing to cool completely.
