Fried Green Tomatoes (Print Version)

# Ingredients:

01 - 3 medium-sized, firm green tomatoes
02 - Kosher salt

→ Coating

03 - 1 cup all-purpose flour
04 - 1 tablespoon Cajun seasoning
05 - 1/2 cup milk or buttermilk
06 - 1 large egg
07 - 1/3 cup fine white cornmeal
08 - 1/2 cup fine dry bread crumbs

→ For Frying

09 - 1/4 cup peanut, canola, or olive oil

# Instructions:

01 - Cut unpeeled tomatoes into 1/2 inch slices. Sprinkle slices with salt and let them stand for 5 minutes.
02 - While tomatoes rest, prepare three shallow bowls: First with flour and Cajun seasoning, second with whisked buttermilk and egg, and third with combined breadcrumbs and cornmeal.
03 - Heat oil in a skillet over medium heat. Dredge each tomato slice first in the seasoned flour, then dip in the egg mixture, and finally coat with the cornmeal-breadcrumb mixture.
04 - Fry the breaded tomatoes in batches for 3-5 minutes per side until golden brown. Transfer to paper towels to drain excess oil.
