Frito Corn Salad Summer Side (Print Version)

# Ingredients:

01 - 2 (15-ounce) cans sweet corn, drained
02 - 1 (15-ounce) can black beans, drained
03 - 1 (10-ounce) can Rotel, drained
04 - 1 bell pepper, diced (red, green, or yellow)
05 - 1 cup shredded cheddar cheese
06 - 1 (9.25-ounce) bag Fritos

→ Dressing

07 - ⅔ cup sour cream
08 - 1 Tablespoon extra virgin olive oil
09 - 1 teaspoon salt
10 - ½ teaspoon black pepper
11 - ½ teaspoon garlic powder
12 - ½ teaspoon onion powder
13 - ½ teaspoon ground cumin

# Instructions:

01 - In a small bowl, combine sour cream, olive oil, salt, black pepper, garlic powder, onion powder, and ground cumin. Whisk until smooth and fully incorporated.
02 - In a large bowl, mix together corn, black beans, Rotel, bell pepper, and shredded cheddar cheese.
03 - Pour the prepared dressing over the vegetable mixture in the large bowl. Gently stir until evenly coated.
04 - Add Fritos to the salad mixture just before serving. Gently fold them in to maintain their crunch.

# Notes:

01 - The salad is best enjoyed fresh to avoid soggy Fritos.
02 - Prepare the dressing and vegetable mixture ahead of time but combine with Fritos just before serving.
