Funfetti Cheesecake Cake (Print Version)

# Ingredients:

→ Cheesecake Layer

01 - 16 oz. cream cheese, room temperature
02 - ⅔ cup granulated sugar
03 - 1½ Tbsp all-purpose flour
04 - 2 large whole eggs
05 - 1 large egg yolk
06 - 2 Tbsp sour cream
07 - 1 tsp vanilla extract

→ Cake Layers

08 - 2 cups all-purpose flour
09 - 1 Tbsp baking powder
10 - ¼ tsp salt
11 - 10 Tbsp unsalted butter, room temperature
12 - 1⅓ cups sugar
13 - 1 large whole egg
14 - 3 large egg whites
15 - ⅔ cup whole milk
16 - ⅓ cup sour cream
17 - 1½ tsp vanilla extract
18 - ½ tsp almond extract
19 - ⅔ cup rainbow sprinkles

→ Frosting

20 - 16 oz. cream cheese, room temperature
21 - 1 cup unsalted butter, room temperature
22 - 1 Tbsp vanilla extract
23 - 3-3½ cups powdered sugar
24 - ½ cup rainbow sprinkles, plus more for topping

# Instructions:

01 - Beat cream cheese until smooth, add sugar and flour. Mix in eggs, sour cream, and vanilla. Bake in water bath at 325°F for 30-35 minutes. Freeze overnight.
02 - Mix dry ingredients. Cream butter and sugar. Add eggs, then alternate dry ingredients with milk and sour cream. Fold in sprinkles. Bake at 350°F for 20-25 minutes.
03 - Cream together cream cheese and butter. Add vanilla and powdered sugar gradually. Beat until fluffy. Mix in sprinkles.
04 - Layer cake, frosting, cheesecake, frosting, cake. Frost entire cake and decorate with additional sprinkles.
