# Ingredients:

01 - 2 lbs steak filet, ribeye, or sirloin.

06 - 2 green onions, diced (green and white parts).
07 - 1 teaspoon red pepper flakes.
08 - 2/3 cup parmesan, grated/shredded/shaved.
09 - 4 lbs russet potatoes.
10 - 1 cup half and half, warmed.
11 - 6 tablespoons salted butter, melted.
12 - 3/4 cup Monterey Jack cheese, shredded (or mozzarella, pepper jack, etc.).
13 - 1 teaspoon garlic powder.
14 - 3/4 teaspoon salt.
15 - Pepper to taste, about 1/2 teaspoon.
16 - 2 tablespoons smoked paprika (regular paprika is fine).
17 - 1 tablespoon cayenne pepper.
18 - 1 tablespoon onion powder.

# Instructions:

01 - Cut the steak into 2-3 inch pieces, rub with avocado oil, and season with blackened seasoning. Let it rest at room temperature for 10-15 minutes to warm up while you prep the potatoes.
02 - Peel and quarter the potatoes, then soak them in cold water for 10 minutes to shed excess starch. Drain and boil in salted water until fork-tender.
03 - In a large skillet over medium-high heat, warm 2-3 tablespoons of avocado oil. Add steak pieces without crowding, and cook undisturbed for about 2 minutes until browned. Flip, cook 1 more minute, then reduce heat to low for another minute. Remove and cover to keep warm.
04 - In the same skillet, melt 3 tablespoons of butter and sauté 1 tablespoon of minced garlic until aromatic. Toss the steak back, ensuring each piece is well coated in the garlic butter. Cook for another minute and then set aside, tented with foil.
