Garlic Butter Steak Bites (Print Version)

# Ingredients:

01 - 1/4 cup ghee or butter, divided.
02 - 1 tablespoon olive oil.
03 - 1 lb Yukon gold potatoes, cut in 1/2 inch cubes.
04 - 3 cloves garlic, minced.
05 - 1 teaspoon dried thyme.
06 - 1/2 teaspoon dried oregano.
07 - 1/2 teaspoon sea salt, plus more to taste.
08 - 1/4 teaspoon black pepper, plus more to taste.
09 - 1 1/4 lb sirloin steak, cut in 1/2 inch cubes.

# Instructions:

01 - Heat cast iron skillet over medium heat. Add oil and 2 tablespoons ghee.
02 - Add potatoes, garlic, and seasonings. Cook 8-10 minutes until golden and tender, stirring every 1-2 minutes.
03 - Take potatoes out of pan and set aside.
04 - Increase heat to medium-high, add remaining ghee and steak. Let sear 2 minutes before stirring.
05 - Return potatoes to pan, combine with steak, adjust seasoning and serve.

# Notes:

01 - Cut potatoes small and uniform.
02 - Let meat sear before stirring.
03 - Can use any small potato variety.
