Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, toss the halved baby potatoes with 1 tbsp olive oil, 2 minced garlic cloves, ½ cup Parmesan cheese, salt, and pepper. Arrange on one side of the baking sheet.

In the same bowl, coat chicken breasts with remaining olive oil, garlic, Italian seasoning, smoked paprika, and remaining Parmesan. Place them beside the potatoes on the baking sheet.

Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.

Sprinkle fresh parsley over the top before serving.
