Cook tortellini according to package directions. Drain and set aside.

Sear steak in hot skillet with olive oil, seasoned with salt and pepper. Cook for 2–3 minutes per side until browned. Remove and set aside.

Add butter and garlic to skillet, sauté for 1 minute until fragrant. Deglaze pan with chicken broth, then stir in heavy cream.

Add Parmesan cheese, stirring until smooth and creamy. Return steak to skillet and fold in spinach, if using.

Add cooked tortellini to the skillet, tossing to coat in sauce. Simmer for 1–2 minutes to meld flavors.
