Ginger Lime Pork Coconut Rice (Print)

Caramelized ground pork with zingy ginger-lime sauce served atop fragrant coconut rice and topped with crunchy peanuts.

# Ingredients:

→ For the Pork

01 - 1 tablespoon olive oil
02 - 3 scallions, thinly sliced (white and green parts separated)
03 - 4 cloves garlic, minced
04 - 1½ tablespoons fresh ginger, minced or grated
05 - 1½ pounds ground pork
06 - ⅓ cup light brown sugar, packed
07 - 3 tablespoons lime juice
08 - 1 tablespoon sriracha
09 - Fine sea salt and freshly ground black pepper, to taste

→ For Serving

10 - 1 batch coconut rice
11 - Chopped peanuts
12 - Lime wedges
13 - Fresh herbs (cilantro, mint, and/or Thai basil)

# Directions:

01 - Cook coconut rice according to your preferred recipe or package instructions.
02 - Heat olive oil in a large sauté pan over high heat. Add the white parts of scallions, garlic, and ginger. Sauté for 1-2 minutes until fragrant.
03 - Add ground pork to the pan. Break it up with a wooden spoon and cook until no longer pink.
04 - Stir in brown sugar, lime juice, and sriracha. Mix until pork is evenly coated. Let the mixture cook undisturbed for 2 minutes until caramelized on the bottom. Stir and repeat for another 1-2 minutes for additional caramelization.
05 - Taste and adjust seasoning with salt, pepper, or additional sriracha as needed. Serve over coconut rice and garnish with chopped peanuts, green parts of scallions, fresh herbs, and lime wedges.

# Notes:

01 - For best results, prepare the coconut rice while the pork mixture is cooking to ensure both components are ready to serve at the same time.
