Place cod fillets in a shallow dish or resealable bag. Pour the marinade over the fish and allow to marinate for 15-30 minutes.

Preheat oven to 200°C. Transfer cod to a parchment-lined baking dish and bake for 12-15 minutes, or until fish flakes easily with a fork.

Heat a thin layer of oil in a skillet over medium heat. Cook cod for 3-4 minutes per side, occasionally spooning extra marinade over the fillets.

Pour remaining marinade into a small saucepan. Bring to a simmer, stir in cornstarch slurry if using, and simmer for 1-2 minutes until sauce thickens.
