Gluten Free Banana Bread (Print Version)

01 - 3-4 medium overripe bananas, mashed (1½ cups)
02 - ⅓ cup unsalted butter, melted
03 - ¾ cup granulated sugar
04 - 1 large egg, beaten
05 - 1 teaspoon vanilla extract
06 - 1½ cups gluten-free all-purpose flour
07 - ¾ teaspoon baking soda
08 - ¾ teaspoon baking powder
09 - ½ teaspoon salt

# Instructions:

01 - Preheat oven to 350°F. Grease an 8x4-inch loaf pan generously with cooking spray.
02 - In large mixing bowl, combine mashed bananas, melted butter, sugar, egg, and vanilla.
03 - In smaller bowl, whisk together gluten-free flour, baking soda, baking powder, and salt.
04 - Add dry ingredients to wet ingredients and stir until fully combined. Batter will be slightly lumpy from banana pieces.
05 - Pour batter into prepared pan. Bake 50-60 minutes until tester comes out clean.
06 - Cool on rack 15 minutes before removing from pan. Cool completely before slicing.
