Golden Beet Burrata Stacks (Print Version)

# Ingredients:

→ Beets and Dairy

01 - 3 golden beets, roasted and sliced into ½-inch thick rounds
02 - 2 red beets, roasted and sliced into ½-inch thick rounds
03 - 1 fresh burrata cheese ball, torn into creamy pieces

→ Toppings and Garnish

04 - ¼ cup pistachios, toasted and coarsely chopped
05 - Zest of 1 orange
06 - 1 tablespoon extra virgin olive oil
07 - 1 tablespoon honey
08 - ½ teaspoon flaky sea salt
09 - ½ teaspoon freshly ground black pepper
10 - Fresh thyme leaves

# Instructions:

01 - Preheat the oven to 200°C (400°F). Wrap each beet in foil and place on a baking sheet. Roast for 45–50 minutes or until fork-tender. Let cool, peel, and slice into ½-inch thick rounds.
02 - Layer a golden beet slice as the base, add a spoonful of burrata, and top with a red beet slice. Repeat the layers, finishing with a dollop of burrata.
03 - Sprinkle with toasted pistachios. Drizzle with olive oil and honey. Top with orange zest, flaky sea salt, and freshly ground black pepper.
04 - Garnish with fresh thyme leaves and serve immediately.

01 - For an extra flavor boost, roast the beets with a dash of vinegar or rosemary.
