Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Slice feta into 8 small blocks. Mix chopped cranberries with lemon zest in a small bowl.

Place one sheet of phyllo on a clean surface and brush with melted butter.

Add a block of feta and a pinch of cranberry mixture to the bottom edge of the phyllo sheet. Roll tightly, folding in the sides as you go.

Repeat the process with the remaining phyllo sheets and filling.

Place the rolls seam-side down on the prepared baking sheet and brush the tops with more melted butter.

Bake for 20–22 minutes, or until golden brown and crisp.

Warm the honey slightly and drizzle over the baked rolls. Sprinkle with parsley and serve immediately.
