Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).

In a separate bowl, whisk together the melted butter, egg, milk, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

While the muffins are baking, mix the granulated sugar and ground cinnamon in a small bowl.

Once the muffins are done baking, remove them from the oven and let them cool for about 5 minutes in the pan. While they are still warm, brush each muffin with melted butter and then roll them in the cinnamon sugar mixture until fully coated.
