Juicy Mediterranean-style chicken patties with sun-dried tomatoes, spinach, and aromatic herbs for a flavorful meal.

# Ingredients:

→ Burger Patties

01 - 450g ground chicken
02 - 60g diced red onion
03 - 3 garlic cloves, minced
04 - 60g sun-dried tomatoes, finely chopped
05 - 30g baby spinach, roughly chopped
06 - 1 tablespoon fresh dill, chopped
07 - 2 teaspoons dried oregano
08 - 1 teaspoon kosher salt
09 - ½ teaspoon ground black pepper
10 - 2 tablespoons extra virgin olive oil

→ Optional Toppings

11 - Butter lettuce leaves
12 - Tzatziki sauce
13 - Crumbled feta cheese
14 - Sliced red onion
15 - Sliced tomato
16 - Sliced avocado

# Directions:

01 - In a medium bowl, combine the ground chicken, red onion, garlic, sun-dried tomatoes, spinach, dill, oregano, salt, and pepper. Use your hands to thoroughly mix all ingredients until well incorporated.
02 - Divide the mixture evenly into 4 portions and shape each into a uniform patty, approximately 1cm thick.
03 - Heat the olive oil in a large skillet over medium heat. Cook the patties for approximately 5 minutes per side, until golden brown and the internal temperature reaches 74°C. Alternatively, grill the patties over medium heat for the same duration.
04 - Enjoy the patties plain or assemble into burgers with your preferred toppings and condiments from the optional ingredients list.

# Notes:

01 - Store cooked patties in an airtight container in the refrigerator for 3-4 days.
02 - For freezing, allow cooked patties to cool completely, then freeze on a baking sheet before transferring to a freezer-safe container with parchment paper between layers. Patties will keep for up to 3 months.
03 - Raw patties can be prepared one day in advance and stored in the refrigerator with parchment paper between each patty.
04 - These burgers pair excellently with Greek-style fries.
05 - Leftover sun-dried tomatoes work well in Mediterranean baked feta or Tuscan chicken dishes.
