Greek Chicken Meatballs Tzatziki (Print)

Juicy Greek chicken meatballs with creamy tzatziki and fresh herbs.

# Ingredients:

→ Meatballs

01 - 2 teaspoons olive oil, divided
02 - 2 pounds ground chicken
03 - 1 egg
04 - 1/4 cup finely diced red onion
05 - 3 cloves garlic, finely minced
06 - 2 tablespoons fresh dill, chopped
07 - 2 tablespoons fresh mint, chopped
08 - 1/2 teaspoon lemon zest
09 - 1 teaspoon dried oregano
10 - 1/2 teaspoon ground coriander
11 - 1/2 teaspoon red pepper flakes
12 - 1 teaspoon salt
13 - 1/4 teaspoon black pepper
14 - 2 teaspoons red wine vinegar (optional)

→ Tzatziki

15 - 1 cup grated cucumber (from about 1/2 large English cucumber)
16 - 1 cup Greek yogurt (not low-fat)
17 - 2 tablespoons lemon juice
18 - 1/2 teaspoon salt
19 - 1 clove garlic, grated or minced
20 - 2-3 tablespoons minced dill, mint or a mix

# Directions:

01 - Preheat your oven to 400°F (200°C). Drizzle 1 teaspoon of the olive oil over a large baking sheet. Set aside.
02 - In a large bowl, combine the remaining teaspoon of olive oil, ground chicken, egg, red onion, garlic, fresh dill, fresh mint, lemon zest, oregano, coriander, red pepper flakes, salt, pepper, and red wine vinegar (if using). Mix until well combined but do not over-mix.
03 - Using a cookie scoop or your hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
04 - Bake the meatballs for 18-20 minutes, or until they reach an internal temperature of 165°F (74°C). To add color, place them under the broiler for 2-3 minutes before cooking time ends.
05 - While the meatballs are baking, prepare the tzatziki. Place the grated cucumber in the middle of a clean kitchen towel and squeeze out excess moisture. Transfer to a medium bowl and combine with Greek yogurt, garlic, lemon juice, dill and/or mint, and salt. Stir until well mixed.
06 - Serve the meatballs warm with tzatziki, pita bread, rice, or a Greek salad.

# Notes:

01 - Do not over-mix the meatball mixture to ensure tender meatballs.
02 - Squeeze out as much moisture as possible from the cucumber to prevent runny tzatziki.
