Greek Meatball Bowl (Print)

Seasoned beef meatballs with tzatziki, rice, and Mediterranean vegetables create a balanced, flavorful meal.

# Ingredients:

→ Meatballs

01 - 450g ground beef
02 - 60g breadcrumbs
03 - 60ml fresh parsley, chopped
04 - 60g Parmesan cheese, grated
05 - 5g garlic powder
06 - 5g dried oregano
07 - 2.5g ground cumin
08 - 2.5g ground cinnamon
09 - 1.25g salt
10 - 1.25g black pepper
11 - 30ml olive oil

→ Bowl Components

12 - 200g cooked white rice
13 - 150g cherry tomatoes, halved
14 - 1 cucumber, sliced
15 - 1/2 red onion, thinly sliced
16 - 60g Kalamata olives, pitted and sliced
17 - 120ml tzatziki sauce
18 - 15ml fresh lemon juice

# Directions:

01 - Preheat the oven to 200°C.
02 - In a large bowl, combine ground beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and pepper until evenly incorporated.
03 - Shape the mixture into small meatballs approximately 2.5-4cm in diameter.
04 - Place meatballs on a parchment-lined baking sheet and drizzle with olive oil.
05 - Bake in the preheated oven for 15-20 minutes until cooked through and lightly browned.
06 - While meatballs are baking, combine halved cherry tomatoes, sliced cucumber, red onion, and Kalamata olives in a medium bowl.
07 - Remove meatballs from oven and allow to rest for 3-5 minutes.
08 - Begin assembly by placing a portion of cooked rice in each serving bowl.
09 - Top rice with the fresh vegetable mixture, followed by several meatballs.
10 - Drizzle generously with tzatziki sauce, squeeze fresh lemon juice over the top, and serve immediately.

# Notes:

01 - For best flavor, the meatballs can be prepared up to a day in advance and reheated before serving.
02 - Tzatziki can be store-bought or homemade using Greek yogurt, cucumber, garlic, and herbs.
