Green Goddess Chicken Salad (Print Version)

# Ingredients:

→ Chicken mixture

01 - 3 large cooked chicken breasts
02 - 1 cup diced celery
03 - 1/2 cup diced red onion
04 - 3/4 cup sliced almonds

→ Herbs and aromatics

05 - 1 cup parsley
06 - 1/2 cup dill
07 - 1 small bunch green onions

→ Dressing base

08 - 1.5 cups 5% plain Greek yogurt
09 - 1/2 cup mayonnaise
10 - 2 tbsp Dijon mustard
11 - 3 cloves garlic
12 - 2 tbsp lemon juice
13 - 1 tbsp apple cider vinegar
14 - 1 tsp salt
15 - 1/2 tsp pepper

# Instructions:

01 - Add cooked chicken breasts to a food processor and pulse for 10 seconds until finely shredded. Alternatively, shred chicken by hand.
02 - In a large bowl, mix the shredded chicken with diced celery, red onion, and sliced almonds.
03 - In a food processor, add parsley, dill, and green onions. Layer on Greek yogurt, mayonnaise, Dijon mustard, garlic, lemon juice, apple cider vinegar, salt, and pepper. Blend until smooth, scraping the sides as needed.
04 - Pour the prepared dressing over the chicken mixture and stir thoroughly until well combined and the chicken is fully coated.
05 - Serve as is, with crackers, or on bread as desired.

01 - For best results, prepare the dressing fresh to maximize flavor.
